Basic recipe "Città Slow snail"

Dear friends of the sweet side of life,

Città Slow is part of the international network of worth living cities. Worth living together also means share with each other. So, we really like to share our sweet secret with you - under the aspect of "regional products and producers".

Basic recipe "Città Slow snail"
by Andrea Grabner

Puff pastry snails - about 30 pieces
2 packages puff pastry - bio spelt, for about 30 pieces

Chocolate cream stuffing:
250 ml whipped cream - bio (also with soy whipped cream)
150 g milk chocolate - fair trade bio

a few drops rum, vanilla, cinnamon...
1 package whipping cream stiffene

Glaze:
150 g dark chocolate - fair trade bio

Furthermore:
small Austrian cream pastry forms, pastry wheel, baking paper, aluminium foil, powdered sugar and love
Preperation time: about 60 min.
(extra: Chocolate cream: 5 min. plus 12 hours cooling)

For the chocolate cream stuffing bring the whipped cream to boil and dissolve the small chopped chocolate in there. Refine with a few drops of rum. Then, let the cream rest in a cool place for at least 12 hours (the longer the better).

Bring the dough in a horizontal position in front of you. Cut 1,5 cm wide strips with the pastry wheel top down. Start at the thinner end and wrap four rotations. Put the forms with adequate distance next to each other on a baking tray covered with baking paper. Bake the Austrian cream pastry in a pre-heated oven at 200 degrees (according to puff pastry instruction) for 12 - 16 minutes until they are golden yellow. Take them from the forms when they are still hot and let them rest in a cool place.

During baking whip the prepared chocolate-cream with a mixer. Add whipped cream stiffener and whip it until it becomes a smooth cream (BUT: you do not want butter).
Fill it in a piping bag and then in the cooled puff pastry rolls.
Let the coating melt and dip in the filled snails with both sides. Put them on the aluminum foil and let them solidify in the refrigarator.

Sprinkle with powdered sugar and enjoy mmmmhhh!

I hope you enjoy it and good luck!
Your Andrea Grabner, Città Slow representative
